This pan is the lightest one currently listed, and has the handle that stays the coolest while cooking.
 
Why is that? great question, its forged out of 14g steel instead of 12g. That does 2 things first off it reduces the weight by 20% and it makes it much more difficult to raise without crinkling (which is why there is only one available). Anyway the goal with this pan was specifically to make it as light as possible. The twisted handle effectively makes it hollow, both reducing weight as well as extending the distance the heat has to transfer to heat the handle.
